FSS 1248 Garde-Manger — 3 Credit Hours

Students will acquire knowledge and demonstrate skills in the application of special garde-manger techniques used in ice and tallow sculpturing. The class will observe dexterity in the proper use of tools to produce dinner and ice sculptured showpieces. Eight contact hours: two lecture hours, six laboratory hours. A.S., A.A.S.
