FSS 2284 Catering and Buffet Management — 3 Credit Hours

Prerequisites: HFT 1265 and FSS 1221. This course provides future managers with skills in catering and buffet operation functions. Students will discuss, plan and execute a variety of catering concepts which include marketing principles and con tracts, food costs, preparation of menus, serving styles and dining area layouts. Eight contact hours: two lecture hours, six lab o ratory hours. A.S., A.A.S.
